Tomato Egg chuyney

Tomato Egg chutney


Ingredients:

Egg    - 2
Onion    - 3 ( chopped finely ) 
Tomatoes   -   4- 5 ( chopped finely )
Green chillies    - 2 ( slit )
curry leaves    - 10 ( chopped finely )
Coriander leaves to garnish (chopped finely )
Chillie powder  -  1-1/2 tsp
Turmeric powder    - 1/4 tsp
Ginger   - small piece ( less than 1/2" ) ( chopped finely )
Mustard seed    - 1 tsp 
Jeera seed       - 1/2 tsp
Oil   - 3 tbsp
Salt to taste

Method:


  • In a pan add oil, when the oil is heated add mustard seed wait a min for it to splatter,then add jeera seed, chopped onions, curry leaves , green chillies and chopped ginger and saute for 5 min.
  • Add chopped tomatoes, chillie powder and turmeric powder, mix throughly and let it cook for another 7-8 min.
  • Mash the tomatoes with the help of your spatula.
  • Now add eggs,sprinkle little salt for the eggs and toss well.
  • Add coriander leaves and serve hot.
  • Yummy chutney is ready to serve.
  • If you need more spice just add little black pepper powder.
Tips:
      Curry leaves is very good for our health, so while using curry leaves chop finely and add it to the dish.
